Ingredients for 8 portions

2 russet potatoes
1/4 tsp of each sea salt & black pepper
1~2 zucchini
1~2 eggplant
sea salt for eggplant
1 chicken breast (approx. 240g)
sea salt & black pepper to taste
2 springs of thymes
4~6 cloves of garlic
400~450g Italian passata
1/2 tsp of each sea salt & black pepper
5~7 tsp brown sugar
65g Mozzarella
8g panko breadcrumb
