Elizabeth’s Tips
1. Cut Galangal and lemongrass right before use would give a much better flavor and fragrance.

Ingredients for 2~3 servings

4 skinless boneless chicken thighs
1/2 tsp sea salt
1/4 tsp black pepper

Curry sauce
3~4 cloves or garlic
6~8 shallots
1 Thai green chili
3 dried Medjool dates
500g pumpkin
1 Tbsp homemade ketchup自家製茄汁 1湯匙
2 Tbsp water

Curry ingredients
8~10 slices of Galangal
2~3 sticks of lemongrass
3 cloves of garlic
6~8 shallots
1 Indian coconut
1/2~2 sticks of carrot (bigger size: 1/2, organic small size: 2)
3~400g low sodium chicken stock (use for cooking)
5 Thai eggplant
1 Tomato
1 big or 3 small bell pepper
100~200g low sodium chicken stock (use to adjust consistency)
sea salt to taste
