Elizabeth’s Tips
1. Drain the Curry Sauce One and continue to make Curry Sauce Two afterwards if you don’t want to chew the  lemongrass while enjoying your food.
2. Batch cook the curry and freeze in portions. Reheat before servings.

Curry Sauce One
2 slices of spring ginger
5 cloves of garlic
10 shallot
1 broccoli
1/4 tsp sea salt
2 Tbsp dried shrimp
10 Medjool dates
1 tsp grounded cumin
1 tsp turmeric
600~700g low sodium chicken stock
4~6 stems of parsley

Curry Sauce Two
1 of each red and green chili
6 shallot
12 slices of galangal
3 sticks of lemongrass
280g (approx 1) Indian coconut
600~700g low sodium chicken stock

Others
300~400g beef chuck
1/4~1/2 tsp sea salt
4 slices of ginger root
12 Thai eggplant
2 tomatoe
1/2~1 tsp sea salt
white pepper to taste
20~30 Thai basil leaves
