水 50克(大約3湯匙 + 1茶匙)
海鹽 適量
雞蛋 1隻

蝦肉 4隻
洋蔥粉 1/4茶匙
蒜頭粉 1/4茶匙
煙紅椒粉 1/4茶匙(La Chinata Smoked Paprika, Sweet)
海鹽和黑胡椒 各1/4茶匙
淡味橄欖油 1/2茶匙

椰菜 150克(約1/4個)

上碟時另需木魚絲和海苔粉。

【如想自製燒汁和蛋黃醬】

自製燒汁
低鈉生抽 80克(大約5湯匙 + 1茶匙)
日本清酒 30克(大約2湯匙)
味醂 15克(大約1湯匙)
白醋 5克(大約1茶匙)
黃糖 25克(大約2湯匙)

低脂蛋黃醬
原味全脂乳酪 15克(大約1湯匙)
淡味橄欖油 5克(大約1茶匙)
白醋 5克(大約1茶匙)
蜜糖 5克(大約1 1/4茶匙)

Ingredients for 1 serving
4 shrimp shell
50g water (approx 3 Tbsp + 1 tsp)
sea salt to taste
1 egg

4 Shrimp flesh
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp Smoked Paprika, Sweet
1/4 tsp of each sea salt & pepper
1/2 tsp light olive oil

150g cabbage (approx 1/4 piece)

You’ll also need dried bonito flakes (aka Katsuobushi) and dried green seaweed (aka Aonori) to scatter the top.

Homemade Okonomiyaki Sauce and low fat mayonnaise

Okonomiyaki Sauce
80g low sodium light soy sauce (5 Tbsp + 1 tsp)
30g Japanese sake (2 Tbsp)
15g Japanese mirin (1 Tbsp)
5g white vinegar (1 tsp)
25g brown sugar (approx. 2 Tbsp unpacked)

Low fat mayonnaise
15g full fat plain Greek Yogurt (approx. 1 Tbsp)
5g light olive oil (1 tsp)
5g white vinegar (1 tsp)
5g honey (1 1/4 tsp)
